I'm no lawyer, but I would think that if winning a defamation lawsuit over negative reviews were easy or practical, we'd see businesses filing such lawsuits all the time.
I also imagine it would be difficult to win a defamation lawsuit if your ads contain heavily edited photos or false claims about your age, since such false advertising would justify the negative reviews and demonstrate a pattern of deceptive business practices.

Defamation suits are some of the hardest lawsuits to win, and the most expensive. It often takes years, and tens or hundreds of thousands of dollars - assuming it isn't dismissed by the judge off the bat. Knowing most sp's, i highly doubt any of them have the will and tenacity to go through with something like this.
I would be far more concerned with the threat of blackmail. Plus, it isn't out of the question for her to just call the cops and get your ass arrested under bill c-36 (remember, its legal for escorts to sell but illegal for clients to buy).

It’s laughable how fast some of these escorts cry “defamation” the second someone leaves an honest bad review. Here’s a reality check: defamation isn’t “someone hurt my feelings.” If you’re lying in your ads, using old pics, or giving trash service, people are allowed to say so, it’s called the truth, and that’s a complete defense in court.
Also, they might want to think twice before threatening lawsuits when your entire business exists in a legal gray area in Canada. Do you really want to drag your name, your illegal activities, and your clients’ names into a courtroom and onto public record? That’s not just dumb, it’s suicidal for your so-called ‘privacy’ and your livelihood.
If you don’t want bad reviews, stop scamming, stop half-assing, and stop pretending you’re some kind of victim when people simply tell the truth about you.
